Preheat oven to 425 degrees F and lightly oil a #baking sheet{}. Wash and dry all produce. Slice @yukon gold potatoes{10%oz}(into ¼-inch rounds), trim and mince @scallions{2%stalks}(separating whites from greens), peel and mince @garlic{2%clove}, and trim @green beans{6%oz}.

In a #large bowl{}, toss potatoes with 2 tbsp @cooking oil{2%tbsp} and a couple big pinches of @salt{to taste} and @black pepper{to taste} until thoroughly coated. Add potatoes to one side of the prepared sheet in a single overlapping layer, shingling them so they cook evenly. Roast on the middle rack ~{10%minutes}.

Meanwhile, in a #small bowl{}, combine @bbq sauce{2%tbsp} with ½ tsp @chili powder{1%tsp} and season with salt. In a second #large bowl{}, soak @panko breadcrumbs{2%tbsp} with 2 tsp @water{2%tbsp} until absorbed. Add @ground beef{10%oz}, scallion whites, garlic, @sweet and smoky bbq seasoning{1%pack}, ¼ tsp chili powder, ¾ tsp salt, and a pinch of pepper. Mix well and form into two 1-inch-tall loaves, wetting hands with oil first to prevent sticking.

Once potatoes have roasted 10 minutes, remove sheet from oven. Carefully toss green beans on the empty side with a drizzle of oil, salt, and pepper. Place meatloaves next to the green beans. Brush tops of meatloaves with 1 tbsp BBQ glaze each, saving the rest for later. Transfer to the top rack and roast ~{15%minutes}.

Meanwhile, in a second #small bowl{}, combine @sour cream{2%tbsp} with scallion greens to taste. Season with salt and pepper, then stir in water 1 tsp at a time until the mixture reaches a drizzling consistency.

Once meatloaves and green beans have roasted 15 minutes, remove sheet from oven. Brush tops of meatloaves with the remaining BBQ glaze. Return to the oven until meatloaves are cooked through, glaze is tacky, and veggies are tender ~{2%minutes}.

Divide meatloaves, potatoes, and green beans between plates. Drizzle potatoes with scallion crema and serve.
